- 2 leveled cups (185 grams) of Organic Blanched Almond Flour
- 2 teaspoons baking powder
- ½ teaspoon ground cinnamon (optional)
- ½ teaspoon fine salt
Wet ingredients
- 3 eggs, ideally at room temperature
- ½ cup milk (dairy or non-dairy), more as needed
- 2 tablespoons melted butter or melted coconut oil
- 2 tablespoons maple syrup (optional)
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- Butter, Avocado oil, or coconut oil for greasing the pan
Instructions
- In a mixing bowl, whisk together the almond flour, baking powder, cinnamon, and salt until combined.
- In a separate bowl, beat the eggs, milk, and vanilla extract together until smooth.
- Slowly pour the wet mixture into the dry mixture, stirring well until a smooth batter forms. Let the batter rest for a few minutes to allow the almond flour to absorb the liquid.
- Heat a non-stick skillet or griddle over medium heat and grease it with butter or oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a round shape, if necessary.
- Cook the pancakes for around 2-3 minutes until bubbles start to form on the surface. Flip the pancakes and cook for another 1-2 minutes until golden brown on both sides.
- Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep them warm.
- Repeat the process with the remaining batter.
- Serve the almond flour pancakes with your favorite toppings.
